  • Salmon Kiev in a Crust (Serves 4 people)

    Ingredients
    4 x 175g salmon fillets, skinned and boned (each one at least 2.5cm thick)
    100g butter, softened
    2 tablespoons. fresh tarragon, chopped
    1 tablespoon. fresh chives, snipped
    1 small garlic clove, crushed
    500g packet puff pastry, thawed if frozen
    A little plain flour, for dusting
    50g tender young baby spinach leaves
    Good Pinch freshly-grated nutmeg
    1 egg, beaten
    Salt and freshly-grated black pepper .

  • Fish Cakes with Chilli and Coriander Sauce
    (Serves 4 people)


    Ingredients
    700g whiting, skinned, boned and diced
    120g green beans, trimmed and chopped
    1 handful basil leaves
    2 tablespoon. fish sauce
    2 tablespoon. red curry paste
    Grated rind of 1 lemon
    1 teaspoon. brown sugar
    Freshly ground black pepper
    1 egg, lightly beaten
    1 tablespoon. sunflower oil.

  • Salmon Kiev in a Crust (Serves 4 people)

    Ingredients
    4 hake fillets, about 175g each, skinned and boned
    Salt and freshly ground black pepper
    4 tablespoons. rapeseed oil
    4 -6 medium potatoes peeled, cooked and chopped
    1 red onion, peeled and thinly sliced
    2 cloves of garlic, peeled and chopped
    2 courgettes, cut into batons
    24 pitted black olives
    100g semi sun-dried tomatoes, drained
    1 teaspoon. fresh thyme leaves
    Juice of ½ lemon .

  • Haddock with Pasta and Broccoli
    (Serves 4 people)


    Ingredients
    700g haddock, skinned and boned
    375g pasta – linguine or spaghetti are ideal
    250g broccoli, broken up into small florets
    A little salt and black pepper
    125g cream
    125g stock
    2 cloves garlic, finely chopped
    2 chilies, deseeded and finely chopped
    Juice and grated rind of 1 lemon
    1 handful parsley, chopped
    2 handfuls watercress or spinach leaves, roughly torn .

    Ingredients
    8 scallops
    1 lemon
    Splash olive oil
    2 cloves garlic – crushed
    50g butter
    1 tablespoon chopped fresh parsley .

    Ingredients
    700g hake, skinned, boned and finely chopped
    2 tablespoon. fresh parsley, chopped
    ½ red chilli, deseeded and finely chopped
    2cm piece of fresh ginger, grated
    1 garlic clove, crushed
    1 egg, beaten
    2 tablespoon. mayonnaise
    1 tablespoon. fish sauce
    Zest and juice of 1 lime
    40g stale breadcrumbs or Panko breadcrumbs
    1 tablespoon rapeseed oil .
